Thanksgiving is quickly approaching, and I've been trying to decide between a bunch of recipes that I have for what I want to bring for Thanksgiving dinner! One of my favorites is pumpkin chocolate chip bread, so I thought I would share the recipe with y'all!
Pumpkin Chocolate Chip Bread
(the picture does not do it justice at all!)
Ingredients:
2.5 cups white flour
1 cup whole wheat flour
3 cups sugar
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. salt
1 can pumpkin puree (15 oz.)
1 cup vegetable oil
4 eggs
2/3 cup water
semi-sweet chocolate chips
Directions:
-Preheat the oven to 350 degrees
-Grease your loaf pan. This recipe makes 2 loaves in a 9 x 5-inch loaf pan or you can also use mini loaf pans and fill accordingly
-Mix the flours, sugar, baking soda, cinnamon, nutmeg, and salt together.
-In a separate bowl, mix the pumpkin, oil, eggs, and water until well mixed and add to dry ingredients and mix thoroughly.
-Add chocolate chips. The recipe recommends a cup but let's be honest...my mix usually ends up with most of a bag
-Bake for 60-70 minutes until a knife or toothpick stuck in the center comes out clean. Sometimes it takes my bread a little longer than 70 minutes to bake completely. Put the bread on a wire rack to cool completely. Or eat it out of the pan like I do :)

Omg. That looks so good. I would share a recipe, but I haven't baked anything in ages. Mainly because college apt kitchens suck. I wish I could have some. If I find a good one, I'll be sure to let you know.
